December Local Food Spotlight: Leafy Greens

Some of the best foods available locally in the month of December in Stokes County are leafy greens. Spring mix, kale, and spinach are great sources of antioxidants. They are rich in Vitamins A, C, E, and K, as well as B Vitamins. Dark leafy greens contain iron, calcium, magnesium, and potassium. They are high in fiber and naturally low in calories.

Salads are a good way to eat more greens, but consider including them in your wraps, sandwiches, stews, and even smoothies.

Here are two of my favorite homemade salad dressings to enjoy with leafy greens:

Honey mustard 
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup oil, or mayonnaise for a creamier dressing

Ginger Dressing
  • 2 Tablespoons low sodium soy sauce
  • 1 teaspoon vinegar
  • 1 teaspoon honey or maple syrup
  • ½ teaspoon oil
  • ¼ teaspoon ginger powder (or ½ teaspoon fresh grated ginger)
  • 1 teaspoon sesame seeds (optional)

 
One of my favorite smoothies is sweet, a beautiful bright green color, and packs in a full cup of leafy greens:
  • 1 banana
  • 1 cup spinach or kale
  • 1/2 cup frozen mango
  • 1/2 cup frozen pineapple
  • Water, as needed for preferred consistency
