If seeing the stores filled with beautiful varieties of pumpkins wasn't enough of a hint, it is pumpkin season in North Carolina!
Did you know that many parts of the pumpkin are edible? We commonly eat pumpkin flesh, which we often purchase pureed and canned. Pumpkin seeds are also a delicious snack, and the leaves and flowers of the pumpkin plant are also edible!
The type of pumpkin determines what it is used for. Smaller pumpkins are better for eating and the larger varieties are used for carving and decoration in fall. You can still roast and enjoy the seeds from the pumpkins you carve.
Pumpkins are healthy too! They are a great source of Vitamin A, Potassium, and fiber.
