Tomatoes are the third most popular vegetable in the U.S. Botanically, tomatoes are a fruit, but nutritionally they are considered a vegetable.

Tomatoes are a good source of vitamin A, vitamin C, and Potassium.

The level of nutrients in a tomato depends on the variety, one example is that cherry tomatoes have a higher amount of beta-carotene. Beta-carotene is the red-orange pigment that is converted to Vitamin A in our bodies. 

Tomatoes are also an excellent source of lycopene, which is an antioxidant that is actually enhanced by cooking.

Store unwashed tomatoes at room temperature and wash them just before eating. Make sure to refrigerate cut tomatoes. 

Stokes County’s typical tomato growing season is June through September, so try to purchase tomatoes during this time to enjoy the freshest produce possible, or try growing a tomato plant yourself!
